Ingredients for 2 portions

Method

  1. Put four eggs in a saucepan, cover with cold water and bring to a boil. Simmer until the yolks are fully set, about 10–12 minutes after the water boils. The 200 g egg quantity is edible egg without shells.
  2. Cool the eggs in cold water until they can be handled, then peel and mash them finely with a fork. Stir in 40 g mayonnaise, 3 g sugar, 2 g salt and 1 g black pepper. Keep the filling chilled if it will not be served immediately.
  3. Lay out 200 g soft white wheat bread, about four slices. Check the bread label for milk, butter and other animal ingredients if preparing an ovo-vegetarian meal. Divide the egg filling between two sandwiches, press lightly, trim the crusts only if preferred and serve at once.

Namiko Hirasawa Chen’s reference makes a Japanese egg-salad sandwich with shokupan, Japanese mayonnaise, milk and butter. This ovo-vegetarian adaptation deliberately omits milk and butter and uses soft white bread; it is suitable for the ovo profile only when the bread and mayonnaise labels meet that diet. The photograph shows multiple sandwiches packed in a box; this measured recipe makes two. Mayonnaise is conservatively flagged for eggs and mustard. Egg quantities exclude shells and all calories are ingredient-weight estimates, not kitchen-tested values.
