Ingredients for 2 portions
260 g Thinly sliced beef
250 g Bell pepper
100 g Onion
8 g Garlic
25 g Soy sauce
15 g Oyster sauce
8 g Corn starch
2 g Black pepper
18 g Rapeseed oil
400 g Plain ready-cooked rice
70 g Water
Method
Cut beef across the grain into thin strips. Slice peppers and onion and chop garlic. Toss beef with half the soy sauce and half the starch.
Mix the remaining soy sauce and starch with oyster sauce, black pepper and water. Heat the rice according to its packet.
Heat half the oil in a wide pan and sear beef for 2–3 minutes. Transfer to a clean bowl. Add remaining oil, peppers, onion and garlic and stir-fry for 4 minutes.
Return beef and its juices, add sauce and toss for 2–3 minutes until the beef is cooked and the sauce thickens. Serve with the hot rice.
Uses ready-cooked rice, weighed cooked. A short coating while vegetables are cut replaces a long marinade. This is a home-style pepper beef adaptation. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
