Ingredients for 2 portions
180 g Dry wheat noodles
180 g Minced pork
150 g Pak choi
25 g Tahini
25 g Soy sauce
15 g Plain rice vinegar
10 g Fresh chilli
1 g Sichuan pepper
10 g Garlic
8 g Ginger
15 g Rapeseed oil
8 g Sesame oil
100 g Water
20 g Spring onion
Method
Mix tahini, soy sauce, vinegar, sesame oil and water into a smooth sauce. Finely chop chilli, garlic and ginger.
Heat neutral oil in a wok and fry pork for 6–8 minutes until browned and fully cooked, breaking up the mince.
Add chilli, garlic, ginger and Sichuan pepper to the pork and cook for 1 minute. Cook noodles according to their packet, adding bok choy for the last 2 minutes.
Drain noodles and greens, divide into bowls with the sesame sauce, and top with pork and sliced spring onion. Toss before eating.
A pantry-friendly version using tahini instead of roasted Chinese sesame paste; no preserved mustard greens are included.
