Ingredients for 2 portions

Method

  1. Soak mung-bean glass noodles according to their packet, choosing a type ready in 5–10 minutes. Meanwhile shred cabbage and carrot, slice onion and chop garlic.
  2. Mix soy sauce, oyster sauce, sugar and water. Heat oil in a wok; stir-fry onion and garlic for 1 minute, then add thawed prawns and cook for 3 minutes.
  3. Push ingredients aside, add beaten egg and scramble until set. Add vegetables and stir-fry for 3 minutes.
  4. Add drained noodles and the sauce, tossing for 3–4 minutes until noodles soften and prawns are cooked through. Finish with spring onion.

Choose mung-bean glass noodles, not Korean sweet-potato noodles. This version uses a larger noodle portion as a standalone meal; no additional rice is included. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
