Ingredients for 2 portions

Method

  1. Heat the oven grill and halve the bread lengthways. Finely chop tomato, onion, chilli and coriander; mix with lime and half the salt.
  2. Mash the drained canned beans with a splash of water in a saucepan. Warm for 4 minutes and season with the remaining salt.
  3. Spread bread with butter and toast cut-side up for 2 minutes. Spread with beans, cover with grated cheese and grill for 3–5 minutes, watching closely.
  4. Divide between two plates and top with the fresh tomato salsa just before eating.

Photo includes an additional fried egg, which is not included in this version. Uses canned cooked beans and ready-baked bread; choose vegetarian-rennet cheddar. Cheese and bread are practical European substitutes for Oaxaca cheese and bolillos. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
