Ingredients for 2 portions
180 g Dry wheat noodles
60 g Tahini
12 g Sesame oil
24 g Soy sauce
20 g Plain rice vinegar
10 g Sugar
8 g Garlic
180 g Cucumber
30 g Spring onion
10 g Sesame seeds
50 g Water
Method
Bring a pot of water to the boil. Cook 180 g dry wheat noodles according to the packet, until just tender; reserve 50 g of their hot cooking water before draining.
While the noodles cook, cut 180 g cucumber into fine strips, thinly slice 30 g spring onion, and finely grate 8 g garlic. Measure the sesame seeds separately.
In a large bowl, whisk 60 g plain tahini with the 50 g reserved hot noodle water, a little at a time, until smooth. Whisk in 12 g sesame oil, 24 g soy sauce, 20 g plain rice vinegar and 10 g sugar, then the grated garlic.
Toss the still-warm drained noodles with all the sauce. Divide between two bowls, then top with cucumber, spring onion and 10 g sesame seeds. Eat while warm so the sesame sauce stays loose.
A meatless home adaptation of Shanghainese ma jiang mian. This version uses widely available tahini, made from untoasted sesame, instead of Chinese roasted sesame paste; its flavour is milder. The source also discusses peanut butter and optional meat sauce, neither of which is used here. Check noodle, soy sauce and tahini labels for vegan suitability and cross-contact. Wheat, soy and sesame are flagged; the photographed restaurant serving may contain different seasonings or animal ingredients, and a second bowl is visible behind it.
