Ingredients for 2 portions

Method

  1. Put 8 g dried kombu in a pan with 700 g cold water and slowly heat until just before a boil, about 8–10 minutes; remove the kombu. Starting cold and heating slowly is the quick dashi method; a longer cold soak yields fuller flavor. The broth water contributes no kcal; the kombu is conservatively counted despite removal.
  2. Stir 20 g soy sauce and 8 g sugar into the kombu broth. Simmer 90 g ready-seasoned inari pouches in it for 2–3 minutes. Use a pack clearly labelled vegan and check the soy, wheat and alcohol declarations; this representative inari product contains alcohol. Do not add bonito or fish dashi.
  3. While the broth warms, boil 180 g dry egg-free wheat udon in separate water for the packet time, about 7 minutes. Drain, divide into two bowls, add broth and tofu pouches, then top with 30 g chopped spring onion. Check both noodle and soy-sauce labels for actual ingredients and allergens.

Adapted from Just One Cookbook’s kitsune udon: kombu-only dashi, no optional fish cake, mirin or animal stock, and ready-seasoned pouches for the 30-minute version. The Yutaka reference pouch is vegan but its seasoning contains alcohol; alcohol-excluding users should not choose this recipe without a suitable verified alternative. The photo includes sesame not in this recipe; its broth and tofu contents cannot be confirmed. Timing is not kitchen-tested.
