Ingredients for 2 portions

Method

  1. Whisk 150 g plain wheat flour, 2 g salt and 330 g cold water into a thin, pourable batter. It need not be perfectly smooth. Prepare 45 g sliced spring onion, 20 g chopped coriander and 8 g finely chopped fresh chilli.
  2. Heat 10 g rapeseed oil in a small pan. Fry 35 g wheat-and-egg wonton wrappers in batches until crisp and golden, then drain on a rack. The oil listed is an approximate amount consumed; discard any excess left in the pan. Check wrapper ingredients for dairy or meat if following an ovo-vegetarian diet.
  3. Brush a nonstick crepe pan with the remaining 6 g rapeseed oil. For each of two large crepes, spread half the batter thinly, crack and spread 50 g egg over the setting top, then scatter with half the sesame seeds and some spring onion. Cook until the egg is set, flip, and cook the other side briefly.
  4. Spread 15 g hoisin over each crepe and add half the chilli, coriander, remaining spring onion and crisp wonton pieces. Fold each crepe into a parcel and serve immediately, one per person. Check hoisin for animal additives and its soy, wheat and sesame allergens.

Adapted from Adam Liaw’s SBS jianbing. His batter mixes three wheat flours and the sauce can be sweet flour paste; this home version uses plain flour and hoisin. The source deep-fries wrappers; here a small measured amount of pan-frying oil is estimated as consumed, so actual energy may vary. The representative photo does not show the crisp filling. Wonton wrappers often contain egg and may contain dairy or other additives; choose a suitable label for an ovo-vegetarian diet. Contains egg, wheat/gluten, soy and sesame. Not kitchen-tested.
