Ingredients for 2 portions
400 g Plain ready-to-eat silken tofu
500 g Plain ready-cooked rice
200 g Cucumber
25 g Spring onion
10 g Ginger
20 g Soy sauce
Method
Choose 400 g plain silken tofu labelled ready to eat and already chilled. Wrap it loosely in clean paper towel and leave it on a plate for 10 minutes; do not press or squeeze it. During this time slice 25 g spring onion, grate 10 g ginger and slice 200 g cucumber.
Heat 500 g plain ready-cooked rice thoroughly following its packet instructions, then divide between two bowls. Rice cooked from dry needs extra time; use promptly and do not leave warmed rice standing at room temperature.
Drain away any water from the tofu plate, cut the tofu gently into two portions and top each with ginger and spring onion. Drizzle a measured 10 g soy sauce over each portion only at serving time. Serve the chilled tofu and cucumber alongside the warm rice; the tofu is not cooked.
Based on Namiko Hirasawa Chen’s hiyayakko, normally a side dish. The measured ready-cooked rice and cucumber make this a light two-person main meal; bonito flakes are omitted to keep it vegan. The photograph shows the chilled tofu only. Silken tofu energy uses a representative Taifun plain product at 48 kcal/100 g; brands vary. Use a tofu packet that permits eating without further cooking. The 15-minute estimate assumes chilled tofu and ready-cooked rice and has not been kitchen-tested.
