Ingredients for 2 portions

Method

  1. Use purchased ready-cooked rice and ready-sliced beef. Cut the onion into thin half-moons and chop the spring onion.
  2. Bring dashi, soy sauce, mirin and sugar to a gentle simmer in a wide pan. Add the onion and cook for 6–7 minutes.
  3. Separate the beef slices into the pan and simmer for 4–5 minutes until cooked through. Meanwhile heat the rice according to its packet.
  4. Divide the hot rice between two bowls and spoon the beef, onions and a little broth over it. Finish with spring onion.

The 20-minute version requires ready-cooked rice, weighed cooked. Cooking rice from dry adds time. No egg or pickled ginger is included. Timing is an editorial estimate for two portions, including the preparation described; larger batches can take longer. Not kitchen-tested by Schmackig.
